Ingredients for 4:
4 bunches of spinach
1 bunch of garlic greens
4 potatoes
1 dried red pepper
1 dried bell pepper
4 halves of dried tomatoes
1 salt cod
4 eggs
Oil
Salt
Preparation:
Wash the spinach thoroughly, chop it and place in a saucepan. On top of the spinach add the garlic greens, the cod, the potatoes, the dried bell pepper (without seeds), the other peppers and the dried tomatoes. Add a little water but not so much as to cover the ingredients, and a good splash of oil. Cover and cook on a slow heat until the potato is cooked. A few minutes before turning off the heat, break in one egg for each person and once these have set, serve the dish.
