
Ingredients for four:
500 g of chard
250 g of white beans
150 g of potatoes
1 turnip
1 dried bell pepper
2 dried red peppers
24 snails
150 g of pork ribs
Oil
Salt
Saffron
Preparation:
Lightly fry the dried peppers and pound them in a mortar. Put them aside. Put the beans on to simmer on low heat, changing the water after 15 minutes- leave to cook until the beans open.
Add the chard (cleaned and chopped) and boil for ten minutes. Add the pork ribs, the turnip, the potatoes and the snails and cook for 10 minutes more.
Add the oil, aquired from frying the peppers, and simmer for 10 minutes. Finally add the crushed peppers from the mortar and the salt and allow cook and additional 5 or 10 minutes, stirring the contents to thicken.
